Schnitzel Isn’t What You Think It Is…

If you think about the way we grocery shop and make eating decisions, it’s quite at odds with the lifestyles of this century. We wander through aisles and add things to our cart. Then we go home and think ‘what should we make’.

Eating decisions were made based on what foods we could source from our environment when humans were more nomadic, and evolved to make food last longer.

Schnitzel was created to extend meat rations by thinly pounding the meat and adding stale breading to bulk up the meal while making use of stale bread. It wasn’t meant to be some kind of food purely meant for fun and a social game of crumbing veal or pork together.

Cuisine was developed, overtime, by the limitations of what was around us.

The only reason we still have schnitzel nowadays is out of enjoyment. We don’t need to crumb our meat to extend meat rations.

Yet fresh food that aligns with our lifestyles is still so hard to access.

Dinner doesn’t need to be a ‘dish’. It can simply be whatever you have, prepared simply. Literally like a bowl of whole foods you want to eat raw/cooked.

If you seek novelty badly enough, you’ll find a way to incorporate it with a sauce, a spice mix, or maybe a textural topping like a savoury granola.

The future of cuisine is whatever you want it to be.
